Fresh Bean Veggie Burger
A delicious crunchy and healthy addition to any BBQ party!
Makes 4 patties
1 bunch of fresh green or purple beans
1 small or medium onion
2-3 cloves of garlic
1 cup of sprouted lentils. Green or black will do. Possible to replace with cooked lentils without sprouting.
1/2 cup of flour of your choice (I used All Purpose Organic Wheat)
1 tsp ground cumin
1 stp ground coriander
salt to taste
Chop vegetables and lentils in a blender. Add flour, spices and salt. Mix with a little bit of water (1/4 a cup or less, add water slowly to arrive at the right consistency which allows the mixture to stick together and to shape patties that keep form; add more flour if necessary).
Heat the pan on low to medium and add some oil. When it is hot, add a few patties and fry them for 10min on each side (cooking for longer time on a lower heat allows for better preservation of nutrients and keeps the oil steady without fuming, which is why it makes it for a healthy version to store bought veggie burgers).
Or bake them in the oven at 375F for 30-40min. Take them out when they turn amber and crunchy on the outside.
Serve on buns of your choice. I used sourdough spelt buns that I baked for the occasion. With tomatoes, lettuce and onions. Or any other vegetables that inspire your appetite and imagination. Enjoy!
