Carrot Veggie lox: add some zest to your recipes!

 

1st way of cooking is a quick way of adding new textures, while spending less time at it.

 

Ingredients

4 large carrots

2-3 garlic cloves 

2 tbsp. extra virgin olive oil

½ tsp. smoked paprika

Big squeeze of fresh lemon juice

Freshly ground black pepper

½ tsp. ground fenugreek seeds

* Fenugreek is a great spice and is beneficial for digestion ☺

 

Instructions:

Cut the carrots into thin stripes with a peeler. In a pan, start with the oil and garlic. Add the carrots and the rest of the ingredients. Simmer for 10 minutes. It’s ready! Eat hot or cooled, as is, with a bagel, crepes and other pastry, or as a side to your main dish.

 

* This method is also great for cooking cucumbers and zucchini. The secret is to use the peeler to have thin stripes.

With the 2nd variation, which takes more dedication, the ingredients create a more nuanced and intertwined flavor.

 

Ingredients

4 large carrots

½ tsp. sea ​​salt, for coating

3 tbsp. extra virgin olive oil

1 tbsp. rice vinegar

½ tsp. smoked paprika

Big squeeze fresh lemon juice

Freshly ground black pepper

½ tsp. freshly ground fenugreek

 

Instructions :

Preheat the oven to 475 ° F and line a medium baking dish with parchment paper. Place the whole carrots in the dish and rub with salt. Roast the carrots until they are easily pierced with a fork, but not pasty. The timing will depend on the size and freshness of your carrots. Check them out, starting around 40 minutes.

 

Prepare the marinade: in a shallow dish or small bowl, combine the olive oil, rice vinegar, paprika, lemon juice, pepper and fenugreek.

Remove the carrots from the oven and let cool. Use a peeler to peel the carrot into ribbons. If your peeler is attached to the soft carrot, that's fine, cut the pieces as finely as possible with a sharp knife. Place the stripes in the marinade and coat thoroughly. Transfer to the refrigerator and marinate between 30 minutes and a few hours.

Serve with bagels or other pastry, cream cheese, cucumber slices, capers, chives and/or dill.
